Easy Spring Main Course: Coffee-Infused Avocado Toast

A quick, healthy, and flavorful spring breakfast or lunch!

Ingredients:

1 ripe avocado
1 tbsp brewed coffee (cooled)
½ tsp lemon juice
Salt & pepper to taste
1 slice whole-grain bread (toasted)
Cherry tomatoes & microgreens for garnish (optional)

 

Instructions:

1. Mash avocado in a bowl.
2. Add coffee, lemon juice, salt, and pepper. Mix well.
3. Spread over toasted bread and top with cherry tomatoes and microgreens.
